PERFECT RED PEPPER SOUP
This soup recipe is lush, and made a whole lot easier with a soup maker, you can read our Beldray Soup Maker Review here.
Don’t worry if you don’t have a soup maker, as long as you have a blender, you’ll cope.
Ingredients
- 650g Cherry Tomatoes (2 bags from Sainsbury’s)
- 3 Large Red Peppers
- 1 large Onion peeled
- 100 ml Water
- 250 g Soft Cheese
- 1 tbsp Oregano
- 1 tbsp Mixed Herbs
- 1 tbsp Paprika
- Teaspoon garlic (optional)
- Salt & Pepper
Method
- Remove the seeds and chop up the peppers into 2cm chunks.
- Dice the onion
- Drop the whole tomatoes, peppers and onion into a blender or large saucepan, (or soup maker).
- Add the water
- Season with salt pepper and add all herbs & spices to your taste.
- Blend the mixture into a smooth soup-like consistency.
- Heat up the saucepan until the mixture is bubbling then allow to simmer for 10 mins.
- Serve with warm crusty bread & enjoy.
