PERFECT RED PEPPER SOUP

This soup recipe is lush, and made a whole lot easier with a soup maker, you can read our Beldray Soup Maker Review here.

Don’t worry if you don’t have a soup maker, as long as you have a blender, you’ll cope.

Ingredients

  • 650g Cherry Tomatoes (2 bags from Sainsbury’s)
  • 3 Large Red Peppers
  • 1 large Onion peeled
  • 100 ml Water
  • 250 g Soft Cheese
  • 1 tbsp Oregano
  • 1 tbsp Mixed Herbs
  • 1 tbsp Paprika
  • Teaspoon garlic (optional)
  • Salt & Pepper

Method

  • Remove the seeds and chop up the peppers into 2cm chunks.
  • Dice the onion
  • Drop the whole tomatoes, peppers and onion into a blender or large saucepan, (or soup maker).
  • Add the water
  • Season with salt pepper and add all herbs & spices to your taste.
  • Blend the mixture into a smooth soup-like consistency.
  • Heat up the saucepan until the mixture is bubbling then allow to simmer for 10 mins.
  • Serve with warm crusty bread & enjoy.
